CHICKEN AND APPLE SALAD

1/2 kg cooked chicken -- 1lb
2 lg red apples
1/3 cup lemon juice
3 stalks celery -- chopped
3/4 cup slivered almonds
1/2 cup mayonnaise
1/3 cup cream -- whipped
1 tsp salt
1/4 tsp pepper
2 tsp capers -- chopped
6 lettuce leaves

1. Core the apples but do not peel. Cut the apples into chunks and dip in the lemon juice to prevent discolouring.
2. Combine the chicken, apples, celery and almonds. Mix well.
3. Mix together the mayonnaise with the remaining lemon juice, whipped cream, salt, pepper and chopped capers.
4. Add to the chicken and apple mixture and blend thoroughly.
5. Spoon salad onto a bed of lettuce.
