CHEESE SALAD WITH HAM

4 lettuce leaves
3 tbsp olive oil
1 tbsp lemon juice
1/2 tsp mustard powder
2 tbsp cream
salt and freshly ground black pepper -- to taste
110 g cheddar cheese -- diced, 4 oz
110 g gruyere cheese -- diced, 4 oz
110 g ham -- smoked diced, 4 oz
gherkins -- thin strips
2 tbsp parmesan cheese -- grated
1 tbsp chives -- chopped
Line a salad bowl with the lettuce leaves. Blend the oil, lemon juice, mustard powder, cream, salt and pepper in a mixing bowl. Add the diced cheeses, ham and gherkin. Toss and transfer to the salad bowl. Garnish with parmesan cheese and chopped chives.
