CELERY SALAD WITH ANCHOVIES

1 bunch celery -- coursely chopped
- MARINADE-
1/4 cup olive oil
3 tbsp vinegar
salt and freshly ground pepper -- to taste
2 tomatoes -- sliced
3 hard-boiled egg -- quartered
6 lettuce leaves
1 tin anchovy fillets
3/4 cup white wine vinegar
2 tbsp tomato paste
1 tsp salt
1/4 cup olive oil

1. Marinate the celery in a mixture of the oil, vinegar, salt and pepper for at least two hours.
2. Place lettuce on serving dish. Arrange tomatoes on lettuce. Top with eggs and anchovy fillets.
3. Mix together vinegar, tomato relish, salt, pepper and oil.
4. Pour over each salad and serve immediately.
