1/2 kg turkey -- 1lb
cold cooked or any poultryt left overs
4 stalks celery -- sliced
4 shallots -- chopped
1/2 cup chopped nuts
1/2 green pepper -- or red
chopped finely
1/2 cup mayonnaise
1 tbsp lemon juice
salt and pepper

1. Dice the turkey into bite-size pieces.
2. Combine with the celery, shallots, nuts and pepper.
3. Blend the mayonnaise and lemon juice. season to taste with salt and pepper.
4. Add the mayonnaise to the turkey mixture and mix thoroughly.
