BLACKENED GRILLED CHICKEN BREASTS & SALAD

4 whole chicken breast, no skin, no bone, R-T-C
1 tbsp olive oil
- Marinade -
1 cup water
3 tbsp lime juice
2 tbsp soy sauce
2 tsp Worcestershire sauce
- Dressing -
1/4 cup mayonnaise -- see recipe
1/4 cup dijon mustard
1 tsp molasses
1 tbsp white vinegar
1 pinch paprika
- Cajun Spice Blend -
1 1/2 tsp salt
1 tsp sugar
1 tsp paprika
1 tsp onion powder
1 tsp black and white pepper
1/2 tsp garlic powder
1/2 tsp cayenne pepper
- Salad -
16 whole lettuce leaves -- chopped - iceberg
1/2 cup shredded red cabbage
1/4 cup parsley
1/2 cup shredded mozzarella cheese
1 lg diced tomato
1 lg eggs, hard-boiled -- and chopped

Combine marinade ingredients and chicken in resealable bag. Marinate, turning frequently, for at least 4 hours. Preferably overnight.
Combine side dressinging ingredients in a small bowl.
Combine Cajun spice ingredients in a small bowl.
Prepare salad by shredding lettuce into 4 bowls. Spread a layer of cabbage in each. Then the cheese. Sprinkle egg over the top. Then garnish with tomato slices and parsley.
Remove and drain chicken breasts. Cover one side of both pieces with spices. Sear chicken in pant spiced side down for 3 or 4 minutes. Preheat BBQ grill. Turn chicken over and repeat the spicing and searing. The surface of the chicken will be charred and black. Finish the chicken off on you BBQ or grill. Grill each breast on both sides for 2-3 minutes, or until they are done.
Slice the chicken into 1/2"- 12mm strips. Spread chicken pieces over salad and serve with side dressing.
