BASIC MEXICAN SALSA (SALSA FRESCA)

3 med tomatoes -- ripe and seeded
1/2 med onion
2 serrano peppers -- or jalapeno
seeded-minced
1 cl garlic -- minced
1/4 cup fresh cilantro -- finely chopped
3 tbsp fresh lime juice -- or more to taste
sea salt -- to taste

Cut tomatoes and onion into finest dice you have patience to produce. For best results, do not use food processor or blender. Transfer tomatoes and onion to bowl. Add chiles, garlic, cilantro, lime juice and salt. Gently stir to mix. Correct seasoning, adding salt or lime juice. 6 - 8 servings.
