BACON AND CABBAGE SALAD

4 oz bacon -- 250g
1 c cabbage -- chopped
1 tbsp pickle relish -- half-sour
1/2 c sauerkraut
2 scallions -- chop white part only
salt and pepper to taste

This sturdy salad is a Russian Version of coleslaw. You can add leftover meat or chicken to it to create a satisfying luncheon salad.
Sauté the bacon in a heavy skillet over medium-high heat for about 5 minutes, until crispy and brown. Remove the bacon from the skillet, reserving 1 tablespoon of bacon grease, and crumble. Combine the cabbage, pickle, sauerkraut, scallions, crumbled bacon, salt, pepper, and reserved bacon grease in a bowl and toss well. Serve immediately. Serves 2
