AVOCADO CHICKEN SALAD

2 lg avocado
2 cups cooked chicken -- chopped
1/2 cup button mushrooms -- sliced
1 stick celery -- finely sliced
1 sm spanish onion -- chopped
2 tbsp slivered almonds
2 tsp curry powder
1 1/2 cups mayonnaise
salt and pepper
lettuce
chopped parsley for garnish

Slice the avocado pears in half, removing the seed and cut 1 into slices to fan the avocado over the salad, coarsley chop the other to stir through the salad.

Mix the chopped avocado, chicken, mushrooms, celery, almonds, onion, curry powder and mayonnaise together.

Add salt and pepper.

Line your salad bowl with lettuce and spoon the salad over. Carefully arrange the avocado slices over the salad. Garnish with parsley.

Alternatively, peel the halved avocados and slice into a fan shape. Lay the shredded lettuce on the plates, top with the chicken salad and lay the fans of avocado decoratively over the mixture.
Serve chilled.
