ASPARAGUS AND MESCIUN SALAD WITH SMOKED OCEAN TROUT

12 med asparagus spears
about 150 g mesdun -- 5oz
or use assorted chinese greens
1/2 ripe avocado
1 tsp cream
2 tsp lemon juice
2 drops Tabasco sauce
salt -- freshly ground
black pepper
8 sm slices smoked ocean trout
1 shallot -- finely chopped
1/2 tbsp raspberry vinegar
2 tbsp olive oil
1 tbsp chopped walnuts
a few sprigs of chervil

This ligbt first course can be adapted to your taste. For the smoked ocean trout, you can substitute smoked salmon or even cooked prawns, crayfish or scallops. Mesciun is a mixture of small green salad leaves which is very popular in the south of France, and which is now becoming readily available here. Substitute with assorted chinese greens.

Peel asparagus spears, if necessary, then cut them diagonally into pieces approximately 6 cm (2 in) long. Wash asparagus pieces, then steam or microwave them until cooked. Place in ice-cold water for a short time to stop the cooking. Wash mesciun, discarding any damaged leaves, and dry well.

Peel avocado and mash the flesh, using a fork. Add cream and season with lemon juice, Tabasco and pepper. Place a teaspoon of avocado puree onto each slice of trout and roll or fold each slice up neatly.

In a small bowl mix shallots, vinegar, salt, pepper and olive oil. Season greens with half of this dressing and the asparagus with the remainder.

Place some greens in the centre of each plate (it can be placed in a cup first to ‘mould’ it), and arrange asparagus and trout attractively around it. Sprinich with chopped walnuts and some chervil and serve, perhaps topped with an edible flower, such as nasturtiums or viola.
