ARUGULA AND PROSCIUTTO DI PARMA SALAD

4 thin slices Prosciutto di Parma -- 1/2" - 13mm wide str
1/2 cup shaved or coarsely grated Parmigiano-Reggi
2 tablespoons toasted pine nuts
1/8 cup balsamic vinegar -- mix with 1/8 cup oli

In a large bowl, combine arugula, Prosciutto di Parma, cheese and pine nuts. Toss gently with salad dressing to coat completely. Serve immediately.
