ANCHOVY SALAD

1 lg garlic clove
2 sm anchovies
2 shallots -- minced
2 tbsp chopped parsley
tarragon vinegar
Worcestershire sauce
1 cup mayonnaise
2 tbsp orange juice
1 lettuce
1 cucumber -- sliced with skin
3 tomatoes -- quartered
2 stalks celery -- chopped
1 bunch radishes -- sliced
3 hard-boiled eggs -- sliced
1. Rub the salad bowl with the garlic.
2. Drain one tin of anchovies and mash them with the shallots.
3. Add the parsley, a little vinegar and a little Worcestershire Sauce. Mix well.
4. Add the mayonnaise and the orange juice and beat well. If the dressing is
too thick and a little more vinegar and orange juice.
5. Wash, drain and dry the lettuce. Tear into bite-size pieces and put in
salad bowl along with the cucumber, tomatoes, celery and radishes.
6. Pour on dressing and toss until well mixed.
7. Garnish with egg slices and anchovies from second tin.
