8 boneless skinless chicken breast halves
1/2 cup olive oil -- or vegetable oil
1/2 cup dry white wine
2 garlic cloves -- crushed
1 tsp chopped fresh parsley -- Italian
1 tsp dried oregano -- crumbled (leaf)
1/8 tsp red pepper flakes -- crushed, or more
1/3 cup grated Parmesan cheese
salt and pepper
red bell pepper strips -- optional
Preheat oven to 375.
Mix oil, wine, garlic, parsley, oregano, salt and pepper to taste.
Marinate chicken, refrigerated, for 2 hours, up to overnight.
Remove chicken and reserve marinade.
Place breasts, skin-side up in roasting pan; do not crowd.
Brush with part of reserved marinade.
Bake, basting occasionally with marinade, for 40 minutes until skin is crisp.
Sprinkle part of Parmesan over the chicken and return to oven just until Parmesan begins to turn golden.
Remove from oven.
Sprinkle with remaining Parmesan cheese.
Garnish with red pepper strips.
NOTE: Chicken breasts can be grilled about 4 inches - 100mm from coals for 20 minutes, turning and basting with marinade until chicken is golden.
