CHICKEN BACON WRAPPED CHICKEN BREAST ON WATERCRESS

4 chicken breast -- halves without skin
12 slices bacon
1 qt lettuce -- romaine torn
2 cups watercress -- stems removed
1/4 tsp mace
1/2 tsp black pepper -- fresh ground
1/4 cup blue cheese salad dressing

Preheat oven to 450°F-230°C ; oil or grease (bacon dripping, favourite cooking oil, panspray) a casserole dish; lay chicken breasts in dish; sprinkle with mace and pepper. Cut bacon strips in half if needed, lay over top of breasts so no chicken showing. Bake chicken for half an hour or until bacon done "chewy" (if
preferred more well-done, broil, watching carefully, or microwave a further few minutes); remove from oven and let sit for 5 minutes while preparing salad.
Clean and tear greens to bite-size pieces; toss with blue cheese dressing; mound on 2 plates. Lay one chicken breast on each mound of greens and serve
immediately.
