CHICKEN AND AVOCADO IN CREAM

4 lg chicken breast, no skin, no bone, R-T-C
2 tbsp butter
1 tbsp chopped shallots
1/4 lb mushroom -- 250g quartered
2 tbsp cognac
1 1/2 cups heavy cream
1 avocado
peeled, seeded, cut
into 1/2" 12mm strips
Salt and pepper to taste
Cut each chicken breast into 6 or 7 strips, sprinkle with salt and pepper.
Heat butter - VERY hot (don't let it brown) - add the chicken.
Cook at high, stir and shake - for 3 or 4 minutes.
Remove from skillet.
Add shallots, mushrooms and cook briefly.
Sprinkle with cognac and then add the cream - cook down both (about 5 minutes).
Add salt and pepper to taste.
Add the avocado strips and cook gently to heat them slightly.
Finally, add the chicken and heat in the sauce.
