CHEESY CHICKEN BREAST FILLETS

4 lg chicken breast, no skin, no bone, R-T-C
200 g blue cheese -- 6 oz
greek feta or gorgonzola cheese
125 g butter -- 4 oz
1/4 cup chopped parsley
1/4 cup mustard -- seeded
1 tbsp rosemary -- dried
2 tbsp extra virgin olive oil
8 lettuce leaves -- shredded
2 tomatoes -- chopped
1 pinch freshly ground black pepper
Cheese butter: Combine well - cheese, butter and parsley in a small bowl. Shape into a log shape and wrap in plastic film. Chill until firm.
Combine mustard and rosemary. Oil bottom of a baking tray and lay breasts side by side. Coat with mustard mix and bake at 350°F-180°C for 15-20 minutes. Turn oven up to maximum for a further five minutes to crisp up surface of chicken.
Place one or two shredded lettuce leaves on each plate. Cut parsley butter into round slices. Dice tomatoes and toss in olive oil and pepper mix. Spread evenly around the plates on the lettuce. Place a chicken breast on each plate. Slice down the side and insert one or two butte rounds into the slot. Spare rounds should be placed on top of the breasts.
