CHANDRA'S CHICKEN PAPRIKASH

4 lb chicken thighs -- 2kg
2 tbsp peanut oil -- or canola oil
1 cup chopped onion
8 oz sliced mushrooms -- 250g
2 tbsp paprika
1 cup chicken broth
1/2 cup dry white wine
1 tbsp guar gum
16 oz sour cream -- 4456ml

Skin chicken thighs (saving and freezing the skin for making cracklings later).
Heat oil in a very large skillet -- a "chicken fryer" works well.
Brown chicken on both sides, about 15 minutes.
Remove from skillet.
Add onion, mushrooms, and paprika to skillet.
Saute' until onions are transparent and mushrooms are beginning to soften.
Add broth and wine, and stir to deglaze pan.
Return chicken to pan, turning to coat with sauce.
Simmer in sauce for 40 minutes, turning after 20 minutes.
After simmering for 40 minutes, remove chicken from pan again.
Sprinkle not/Starch into sauce, stirring and simmering for a few minutes until thickened.
Add sour cream and stir until well mixed.
for a "company dinner" pour some of the sauce over the chicken pieces on the serving platter, and pass the rest of the sauce in a gravy boat.
For a family meal, return the chicken to the sauce and serve from the pan, letting each family member carry his or her own plate to the table (this will save washing a platter).
Serve with your choice of low-carb pasta, cauliflower, zucchini "noodles", sauteed cabbage, or French-style green beans.
