CARIBBEAN GRILLED JERK CHICKEN

2 lb skinned and boned chicken breasts -- 1k
1/3 cup soy sauce
2 tbsp sesame oil
3 cl garlic -- chopped
2 green onions -- chopped
3 tbsp fresh thyme leaves
1 1/2 tsp ground allspice
1 1/2 tsp freshly ground pepper
1/2 tsp cinnamon
1/2 tsp red pepper
16 wooden skewers -- ( 8 to 10" ) soake
Cut each chicken breast in half lengthwise, then into 4 strips, place in a zip top plastic bag.
Combine soy sauce and next 8 ingredients in a blender, process until smooth. Add to chicken, seal bag, pressing out air. Gently squeeze bag to coat chicken.
Marinate chilled, at least 1 hour and up to 24 hours.
Grill over medium hot coals 3 to 4 minutes on each side or until cooked.
Serve with Mango Papaya Salsa.
