BUFFALO CHICKEN ROLL-UPS

4 lg chicken breast, no skin, no bone, R-T-C -- flaten
2 tsp melted butter
1/4 cup tabasco sauce
3 oz blue cheese -- 90g
Mix tabasco and butter and marinate chicken breasts in it for about 1 hour refrigerated -turn occasionally. Preheat oven to 400°F-200°C . Spray a 2 quart 2 litre
casserol or an 8x8 200x200 cake pan with cooking spray. Remove chicken and put about 1Tablespoon of the cheese in the center of each. Roll up, tucking in
ends, and secure with toothpics. Place seam side down in prepared casserol and bake for 30 minutes or until nicely browned and cooked through.
Sprinkle with remaining blue cheese when serving.
