BROILED CHICKEN WITH LEMON AND BALSAMIC VINEGAR

2 lb chicken pieces -- 1kg
salt and freshly ground black pepper -- to taste
2 lemons -- very thinly sliced
1 tsp minced garlic -- finely minced
1 tbsp chopped fresh rosemary -- plus additional for
2 tsp balsamic vinegar -- approximate

Adjust the oven rack for broiling about 4" - 100mm from the heat. Line the broiler pan with foil. Preheat the broiler.

Place the chicken on the foil and season with salt and pepper to taste.
Place half of the lemon slices on the chicken.
Broil until the lemon is lightly browned and the chicken appears to be cooked on that side, 5 to 10 minutes.
Using tongs, turn the chicken, season the uncooked side with salt and pepper to taste and cook until the skin is lightly browned, about 5 minutes.
Sprinkle the chicken with the garlic and rosemary, cover with the remaining lemon slices and broil until the meat is cooked through and the lemons are slightly browned, about 5 minutes.
Drizzle with the balsamic vinegar and set aside for about 3 minutes.
Sprinkle with additional rosemary and serve.
