BROILED CHICKEN BREASTS WITH SEASONED BUTTERS

2 chicken breast halves -- boned
salt and black pepper to taste
green onion and cilantro butter, or
sun-dried tomato butter
1. Preheat broiler. Season both sides of chicken with salt and pepper.
2. Spread a thin layer of seasoned butter (about 1/2 teaspoon) on chicken pieces.
Place on broiler skin side up and broil until skin turns brown, about 4 minutes.
Turn and broil second side. Continue broiling and turning until meat feels slightly firm to the touch and has turned from translucent to opaque.
Remove from broiler.
3. Cut 1/2' - 13mm deep slashes across skin side of breast.
Spoon additional seasoned butter (about 1 teaspoon) on each breast.
Serve immediately.
