BOB'S OLD-FASHIONED CHICKEN SPIEDIES

4 lg chicken breast, no skin, no bone, R-T-C -- cubed
1 cup olive oil
1/4 cup distilled vinegar
1 lemon -- juiced
1 onion -- chopped
2 cloves garlic
1 tsp poultry seasoning
1 tbsp red pepper flakes -- crushed
1 tbsp basil -- crushed
2 tbsp dried oregano
3 fresh mint leaves
1/4 tsp salt and pepper

Combine marinade ingredients. Let meat marinate in refrigerator for three days. Skewer; grill over hot coals.
