2 chicken breast, no skin, no bone, R-T-C
1/2 cup pork cracklings -- crushed
2 tbsp Italian seasoning
1 tbsp butter -- two 1/2 tbsp
Italian seasoning
pepper
4 tbsp soy protein powder
1 egg -- slightly beaten
1/4 cup olive oil -- for frying
1 tbsp butter -- for frying
Oven 425°F-220°C
Place crushed pork rinds and 2 tablespoons Italian seasoning in a zip lock bag and shake until thoroughly combined.
Place chicken breast halves between layers of plastic wrap and pound with a meat mallet until 1/8 inch 3mm thick.
With the breast smooth side down, place a 1/2 tablespoon pat of butter in the center of each breast. Sprinkle with Italian seasoning and pepper to taste. Fold long sides of breast over the butter and roll up from the end like a jelly roll. It forms a sort of ball. Roll the chicken in soy protein to coat, dip in slightly beaten egg and roll in pork rind mixture.
In a small skillet, heat oil and butter over medium heat. Place chicken in heated pan and just brown coating on both sides. Remove from pan and place in a baking dish. Pour pan drippings over top of chicken. Bake at 425°F-220°C for 20 minutes.
