BARBECUED CHICKEN

Amount Measure Ingredient -- Preparation Method

4 large chicken breast, no skin, no bone, R-T-C
salt and pepper
1/4 cup atkins Bake Mix
4 slices bacon
1/2 cup canned mushrooms

Sprinkle moistened chicken pieces with salt & pepper.
Then roll in Atkins Bake Mix.
Put in shallow baking pan.
On each, put a slice of bacon.
Cover pan with foil.
Bake in 400°F-200°C oven for 40 minutes.
Pour mushrooms with liquid over chicken.
Then streak with barbecue sauce.
Cover & bake 10-15 more minutes.
Uncover & broil/grill approximately 10 minutes or until brown.
NOTE: To prepare ahead, finish first baking.
Then cool & chill.
When ready to complete dinner, proceed as directed, allowing 20-25 minutes for the second baking.
