ASIAN CHICKEN WRAP

For the dressing:
1 tbsp Splenda
3 tbsp vinegar
1 tbsp peanut butter -- sugar free
1/2 tsp salt
crushed red pepper flakes -- to taste
1/2 tsp minced garlic
For the wraps:
2 chicken breast, no skin, no bone, R-T-C
salt and pepper
4 cups lettuce -- Boston or garden
4 green onions
1/4 cup chopped cilantro -- optional
low-carb tortillas 8 -- (8 to 10-inch)

To make the dressing: combine Splenda, vinegar, peanut butter, salt, red pepper flakes and garlic; stir to mix in the peanut butter.
Sprinkle chicken with salt and pepper.
Cook in the microwave, in a skillet with a little nonstick spray or in simmering water until cooked through or substitute 1 1/2 cups cooked chicken or turkey.
Tear the lettuce.
Trim onions.
Slice the onions on the diagonal.
If you have a gas stove, turn the flame on high.
If you have an electric stove, put a skillet over the burner set on medium high.
Heat a tortilla over the flame or in the ungreased skillet, flipping for several seconds, until the tortilla has softened.
Set aside, and repeat with remaining tortillas, stacking them as you go.
Put a little peanut sauce in the middle of the tortilla and spread it around, but not all the way to the sides.
Place some lettuce in it, then a few onion slices, some cilantro if using, and a few slices or chunks of chicken.
Fold the bottom of the tortilla up over the filling, fold the sides in an inch or two, then roll up the tortilla to enclose the filling, pushing and prodding to keep the lettuce and other filling ingredients inside.
If you are not serving the wraps immediately, wrap in plastic wrap and refrigerate.
Makes four servings.
