ALMOND-CRUSTED CHICKEN WITH BLUE CHEESE

4 large skinless boneless chicken breast halves
4 oz crumbled blue cheese -- 125g
olive oil -- for brushing
salt and pepper -- to taste
1 4 oz almond meal -- 125g
2 tbsp chopped fresh parsley
Preheat oven to 350°F-180°C
Make a slit in each chicken breast and stuff in the cheese, which you have divided into four equal portions
Put in a shallow ovenproof baking dish, and brush with olive oil
Season with salt and pepper
Mix the nuts and the parsley, then press onto the chicken
Bake, uncovered for about 25-30 minutes, until cooked through and golden
