PORTABELLE MUSHROOM PIZZA CRUST

6 lg portabelle mushroom caps -- cleaned and trimmed
2 eggs -- beaten
1 1/2 cups finely crushed pork rinds
oil for frying
Dip the caps in the beaten eggs and then into the crushed pork rinds. Lightly fry in oil on both sides. Place the caps on a lightly oiled baking dish or sheet and top each with pizza sauce, shredded cheese, and your choice of toppings.
Bake at 350°F-180°C for about 20 minutes, or until cheese is hot and bubbly.
