BLUE CHEESE VEGETABLE PIZZAS

3 sm zucchini -- thinly sliced
3 stalks celery -- thinly sliced
1 lg carrot -- peeled and grated
1 tbsp olive oil
1 14 oz jar pizza sauce -- Ragú Pizza Quick Sau
2 tbsp blue cheese -- crumbled
Preheat broiler/griller. In a large skillet, sauté vegetables in olive oil until tender. Prepare 3 LC pancakes thicker than normal. What we call in OZ drop scones. Top each pancake with 2 tablespoons pizza sauce, sautéed vegetables and cheese. Broil 6" 150mm from heat, 4-6 minutes or until cheese melts.
