PORK CUTLETS PEPPERONATA

2 tbsp olive oil
1 lg onion -- chopped
2 lg red bell pepper -- capsicums
halved seeded and cut into chunks
2 cl garlic -- crushed
Salt and freshly ground pepper
3 lg ripe tomatoes
Few leaves basil or oregano (optional)
4 lg pork loin chops -- (4 to 6)
Step 1 Heat the olive oil in a heavy saucepan and saute the onions, stir-frying until soft and golden. Add the capsicum and the crushed garlic. Season with salt and pepper, cover and simmer for 10 mins.
Step2 Peel, quarter and seed the tomatoes, and add to pan. Continue cooking for a lurther 5 mins. Just before serving, add the basil leaves or oregano.
Slop 3 Preheat grill 10 mins prior to cooking, or 2 mins if a ribbed grill. Skin the pork chops and remove much of the fat Brush the chops with oil and season with pepper. Place on the greased rack of the grill or ribbed grill pan-Grill, using a high heat, for about 8 mins in total, turning once. The chops should be a delicate pink when cut. To serve, place each cutlet on a big serving of pepperonata.
