PORK CHOPS WITH CIDER

2 lg lean pork chops
2 shallots or spring onions -- finely chopped
1 tbsp chopped parsley
salt and white pepper
1 oz butter
3 tbsp apple cider
Trim pork of excess fat. Score meat lightly with a sharp knife.
Combine the shallots and parsley and season with salt and pepper. Rub mixture into both sides of the meat.
Brush the chops with a little melted butter and grill them until tender.
Meanwhile, warm the cider in another pan and when the pork is cooked, put the grill pan on top of the stove, pour in the warmed cider and let it bubble over a high heat for a few minutes.
Serve hot with green salad .
