LAMB RACKS WITH CUMIN CRUST

4 lamb ribs chops, roasted -- 4-5 per rack
sea salt and freshiy ground black pepper -- to taste
1 tbsp ground cumin
2 garlic clove -- finely chopped
1 tbsp extra virgin olive oil
- Roasted stuffed tomatoes-
4 roma tomatoes -- halved
2 tbsp sun-dried tomatoes -- quartered
or bell peppers(capsicum)
4 black olives -- pit & finely chop
1 tsp capers
Step 1 Trim the iamb of excess fat, then season with salt and pepper. In a small bowl, mix the cumin, garlic and oil.. Cover the scored side of the lamb with a thick layer of the cumin mixlure.
Step 2 Stuff tomatoes with sun-dried tomatoes or capsicum, and sprinkle with olives and capers. Place on a tray and set aside. Place lamb in a baking dish. Roast in a preheated 375°F-190°C oven for 15-20 mins, allow another 5 to 10 mins for well done. Stand for 5 mins.
Step 3 Drizzle a little olive oil over stuffed tomatoes and season with sail and pepper. Roast in oven while lamb is resting. Transfer lamb to 4 heated plates with the roasted tomatoes.
