8 boneless pork chops
1 tbsp Cajun seasoning
2 tbsp vegetable oil
2 red onions -- sliced
1/2 cup barbecue sauce

Rub both sides of pork chops with Cajun seasoning. Refrigerate covered 1 hour to marinate.
In large frying pan, heat 1 Tbsp oil over medium-high heat. Add onions; over medium heat, sauté' until well-browned and soft, about 15 minutes. Add sauce; mix. Over low heat, cook 5 minutes. Remove to bowl; keep warm.
In same frying pan, heat remaining 1 Tbsp oil over medium-high heat. Add pork chops; cook until browned and just cook through, about 3 minutes each side. Serve topped with onion mixture.
