750 g pork spareribs -- 3/4lb rind removed
MARINADE
1/2 cup apricot nectar
1 tbsp brown sugar twin -- or 1 tsp molasses
2 tsp soy sauce
1 cl garlic -- crushed
TOPPING
1/2 cup tomato sauce
1 tsp chili sauce
1 tsp honey
Place all the marinade ingredients into a saucepan, add pork spareribs, and simmer together for 5 minutes. Then cover and stand for 30 minutes.
Mix topping ingredients in a small saucepan and heat gently until a rich coloured mixture develops, approximately 1 minute.
Line a baking tray with foil, or alternately, add enough water to cover the base until 1cm deep. Arrange a cake or griller rack on top and place the spareribs on rack. Spread half the topping over the pork. Bake in a preheated 400°F-200°C oven for 15 minutes, turn pork and spread over the remaining topping and bake for another 15 minutes.
Serve with a tossed green salad.
