BALI-STYLE PORK RIBS

750 g pork spareribs -- 3/4lb)rind removed
1 tbsp brown sugar twin -- or 1 tsp molasses
1 tbsp soy sauce
1 tbsp chili sauce
2 tsp ground coriander
1 tsp ground cumin
1 tsp ground ginger
1 tsp garlic salt -- if desired
1 tbsp oil
2 onions -- sliced
1 cup coconut milk
GARNISH
freshly shredded carrot -- celery and shallots
Cut each sparerib into small pieces and place into a bowl with all the sauces and spices, rubbing them into the pork with the back of a spoon. Leave for an hour.
Heat oil and sauté pork slowly in two batches then remove pork to saucepan. Fry onions in pan dripping until soft and add to the pork with the coconut milk. Simmer uncovered for 30 minutes, stirring often and adding extra chili sauce for a hotter flavour if desired. Serve topped with fine shredded vegetables.
