VINE WRAPPED LAMB FILLETS

6 tbsp Olive Oil
2 cl garlic -- crushed
2 tbsp lemon juice -- or 1 lemon juiced
2 tbsp fresh oregano
3 lamb fillets -- cut from best end
1 sm onion -- finely chopped
125 g pine nuts
1/4 cup chopped parsley
25 vine leaves -- (25 to 30)
Salt and cracked black pepper
2 tbsp olive oil

Mix 4 tbsp of Olive Oil with garlic, lemon juice and oregano and set aside. Trim lamb fillets if not pre-prepared. Slit each lengthwise, almost but not quite through, and spread insides with herb and garlic mixture. Place in a shallow dish and marinate for an hour.

Cook the onion in a small pan with the remaining oil for 5 minutes, or until softened, and add the pine nuts, lemon rind and parsley.

To blanch the fresh vine leaves, drop in boiling salted water for a minute or so until softened. Drain and refresh. Arrange 8-10 vine leaves overlapping in a rectangle slightly more then the length of a fillet, leaving a 5cm 2 1/4" edge all the way around. Place a lamb fillet on top, season with salt and pepper and spoon a third of the mixture down the centre. Press all the sides together to enclose and bring up the vine leaves to fully encase the fillet. Tie with string to secure. Repeat with remaining lamb and vine leaves.
Place in a baking dish, brush with Olive Oil and roast in a preheated very hot oven 425°F-220°C for 10-15 minutes. Remove from the oven and leave in a warm place for around 5 minutes. This time allows the juices to settle, making slicing easier. To serve, cut across into thick slices and arrange on a bed of fresh salad. Pour the pan juices over if you like.
