TURKISH LAMB SHANKS

2 lamb shank
soy flour -- or isolate
1/4 cup olive oil
1/2 lg onion -- chopped
1 cl garlic -- crushed
1 green pepper -- seeded, cored and
chopped
1 tsp cumin seed
1 tsp black peppercorns
4 oz tomato puree
salt and pepper
juice of 1/2 lemon

Ask your butcher to chop through the bone in the lamb shanks.
Roll the shanks lightly in a little flour and brown lightly in the oil in a heavy-based pan. Add the onion and cook gently until the onion is soft.
Add the remaining ingredients, cover and simmer as slowly as possible until the meat is falling off the bone, at least 3 hours.
Serve hot, garnished with lemon wedges, accompanied with Cumber salad
