SLOW SHOULDER OF LAMB

4 lb lamb shoulder -- 2kg.
1/2 lb white wine -- 285ml.
1 lg onion
4 shallots
2 tomatoes -- quartered
1/2 cup sun-dried tomatoes
2 tbsp tomato puree
10 cl garlic -- peeled
salt and freshly ground black pepper -- to taste
2 bay leaves
3 sprigs rosemary

Put shoulder into large ovenware pot. Cover with the liquid, the wine, onions and shallots roughly chopped, the tomatoes, tomato puree, the garlic, salt and pepper to taste. Tuck in the bay leaves and rosemary. Cover the casserole and cook for 4 hours in a 275°F-140°C oven, then increase the temperature to425°F-220°C for 1 more hour. Have a look at it now and then to make sure it is not drying out. At the end of cooking the meat will fall off the bone. Serve in soup plates with salad.
