LEG OF LAMB WITH ROASTED GARLIC

5 lbs lamb -- 2.5 kg
boneless (rolled and tied) leg of lamb
2 heads garlic -- (see below)
2 tbsp olive oil
3 tbsp dijon mustard
2 tbsp fresh lemon juice
herbes de Provence (see below) 2 tsp
1/2 tsp salt and pepper -- to taste
Here's another holiday recipe, if you want something special other than poultry: it would make for a great Easter dinner.
To roast garlic: slice top 1/4 off two heads garlic. Arrange in center of foil square; drizzle with each 1 tsp olive oil each. Fold foil around garlic and seal. Bake in preheated 350* oven about 1 hr, cool. If you've never done this and are a garlic lover, you won't believe the taste. You can add this to your mashed 'fauxtatoes' recipes, or as a chicken rub
herbes de Provence-blend of dried basil, savory, marjoram, sage, rosemary, fennel seeds or lavender - use what you like.
Separate roasted garlic cloves and squeeze to release pulp int a small bowl; puree by mashing with a fork. Combine garlic with next 6 ingredients; spread
over entire surface of roast. Place roast, fat side up, on shallow roasting pan; let stand 30 minutes. Roast in a preheated 325°F-160°C oven to desired temperature.For rare lamb- cook 19-21 minutes per lb (130* internal temp), for medium rare, 21-23 minutes per lb (140* internal temp) and for medium
23-25 miniutes per lb (150* internal temp.)
To serve, remove from oven; cover with foil and let 'set" (to seal the juices) about 10-15 minutes before carving. The internal temp will rise 5 more degrees in this time.
