LAMB RACKS WITH PARSLEY

16 rib lamb rack -- cut into 4
- Coating -
1/2 cup chopped parsley
1/4 cup parmesan cheese -- finely ground
2 tbsp dijon mustard
1 cl garlic -- crushed
1 pinch salt and freshly ground black pepper -- to taste
Pre heat oven to 375°F-190°C. Remove excess fat from racks. Cut small grooves in criss cross pattern on fat side. Place racks in small baking tray. Mix coating ingredients. Press the coating on the racks. Cook for 45 minutes. A little longer for well done. Serve with Greek or Italian salad.
