LAMB CHOPS MEDITERANIAN

Amount Measure Ingredient -- Preparation Method

8 med lamb chops, lean
1 tsp coriander -- ground
2 tsp virgin olive oil
1 shallot -- thinly sliced
1 cl garlic -- thinly sliced
1/4 cup tomatoes, sun-dried
2 tbsp kalamata olive -- pitted and chopped
2 tbsp parsley -- chopped
3 tbsp lemon juice
1 pinch salt
1 pinch pepper

Mix coriander and salt and pepper in a bowl. Rub mixture into lamb. Grill chops for about 5 minutes each side or until just cooked, about 4"- 100mm from heat.
While lamb is grilling , heat oil in a heavy saucepan over low heat. Sauté shallots and garlic 5 minutes or until softened. Do not brown. Add remaining ingredients and stir until just heated throughout. Place chops in pan and cook slowly for 4- 5 minutes. Serve lamb topped with sauce. Serves four
