GLAZED LAMB SHOULDER

4 lb lamb shoulder -- 2k
boned -- rolled and tied
1 tsp salt
1/4 tsp pepper
GLAZE
1 cup apricots -- pureed
1/4 cup applesauce, unsweetened
2 tbsp mint -- finely chopped
Insert spit rod through centre of meat and secure
Rub with salt and pepper
Place over medium hot coals
Cook for approximately 2-2 1/2 hours or until tender
After meat has cooked for 1 hour, baste with glaze every 20 minutes
Heat any remaining glaze and serve with the meat
GLAZE: Combine all ingredients and mix together thoroughly
