BRAINS IN DILL SAUCE FOR TWO

lambs brains
30 g butter -- 1 oz
30 g flour -- 1 oz
1/3 cup half and half
salt and pepper
1 tsp dill
1 sprig dill
1. Rinse brains, remove the skin.
2. Place in a small basin, cover with plastic wrap. Cook on HIGH for 1 1/2 minutes. Turn brains once.
3. Remove and allow to stand covered for 2 minutes.
4. In another small basin, melt butter on HIGH for 30 seconds. Remove, stir in flour, seasonings and dill. Cook on HIGH for 40 seconds. Add half and half.
5. Cook on HIGH for 1 minute stirring twice.
6. Remove, pour sauce briskly over the brains, reheat on HIGH 30 seconds.
7. Serve with buttered toast and a sprig of dill.
