lamb brains 3 off
1/2 cup bread crumbs
LC of course see recipe
2 tbsp butter
2 tsp parsley -- finely chopped
1 tsp lemon zest
1 pinch salt and pepper
4 slices bacon

Soak in strong salt water for about one hour, drain and put on the fire in fresh co!d water. Bring to boil, then strain and chop finely. Add breadcrumbs, butter, chopped parsley, a little grated lemon rind, salt and pepper to tasle. Mix all together with a beaten egg. Take a tablespoonful at a time and fry in very hot olive oil.
Fry a few rashars of bacon and serve with the cutlets.
