BBQ LAMB

6 lb leg of lamb -- 3k boned
MARINADE:
1 cup olive oil
1/4 cup wine vinegar
1 small onion -- chopped
2 cloves garlic -- crushed
freshly ground black pepper
1 tsp salt
1 sprig rosemary
MARINADE: Combine all ingredients and mix together thoroughly
Beat lamb with a meat mallet to flatten
Place in a shallow dish and pour over marinade
Cover and stand for several hours, turn occasionally
Drain and reserve marinade
Barbecue meat over medium hot coals for approximately 2 hours or until meat is tender
Turn frequently and baste with Marinade while cooking.
To serve, carve into thick slices
