BARBECUED LAMB WITH GARLIC-MINT SAUCE

1 cup olive oil
1/4 cup minced fresh parsley
1/4 cup fresh mint -- minced
1 cl garlic -- minced
4 lb leg of lamb -- 2k bone & butterfly

Combine oil, parsley, mint, garlic, and salt and pepper to taste.
Coat lamb with some of this sauce and set aside.
Heat grill.
Grill lamb over medium coals 8 to 10 minutes per side for medium rare.
Brush lamb frequently with remaining sauce while grilling. Brush again as
soon as it is removed from grill. Serve immediately.
