TEXAS-STYLE CHILI

2 lb ground beef -- 1kg
2 onions -- chopped
2 tbsp garlic -- minced
2 tbsp chili powder -- or to taste
2 tsp cumin

Chili is a nice family dish that's also great for a crowd. You can accommodate many different special diets if you set up a build- your-own buffet. And most people appreciate the break from the usual fancy party food.
It's also ridiculously easy to make a lowcarb version if you do it Texas-style. That's because the beans are served separately and the stew has no tomatoes. However, you can serve chopped tomatoes, onion, avocado, guacamole, shredded cheese, sour cream, etc., etc. as toppings for your build-your-own chili banquet.
Traditional Texas chili is made with beef cut in a small dice. However, in the interest of easy cooking, I generally use ground beef, my only non-authentic substitution. Even DH, who grew up in Texas, approves -- because he'd rather have this chili more often than the most-authentic version only when I have the time the time to do it right.
Brown meat lightly. Optional: drain fat. Brown the onions in the fat from the meat, then then garlic. Return meat to pot. Add seasonings and water to cover (barely). Cook 1 hour, adding more water if necessary.
If the gravy is not thick enough, add a little not/Starch or other thickener.
