STEAK AND KIDNY CASSEROLE

2 tbsp soy protein isolate -- or soy flour
1 pinch mustard powder
1 pinch ground mace
Salt and freshly ground black pepper
450 g braising steak -- 1lb cubed
100 g ox kidney -- 4oz cubed
100 g mushrooms -- 4 oz chopped
1 onion -- chopped
1 cl garlic -- crushed
1 1/2 cups beef stock
2 tbsp port wine
1/2 tsp Worcestershire sauce
1 hard-boiled egg -- sliced

Mix the soy, mustard and mace and season with salt and pepper. Toss the steak and kidney in the seasoned soy then place in a casserole dish with the mushrooms, onion and garlic.
Mix the stock, port and Worcestershire sauce and pour over the meat. Cover and cook in a preheated oven at 150C/300F/gas mark 2 for 3 hours until the meat is tender. Remove from the oven, chill and skim any fat from the top. Transfer the meat to a pie dish and arrange the egg
slices on top. serve with mock potato and cooked vegies
