SHEPARD'S PIE WITH CAULIFLOWER SQUASH TOPPING

TOPPING:
1 lb butternut squash -- prepared
1 lb cauliflower -- fresh or frozen
4 tbsp butter
2/3 cup heavy cream -- add 1/3 cup @a time
1 tsp salt
1/4 tsp pepper
1/4 tsp nutmeg
1 lg egg
paprika -- garnish
FILLING:
2 tbsp olive oil
1/2 cup chopped onions
2 cl minced garlic
1 1/2 lb lean ground beef
1 tbsp dried basil
1 tbsp dried oregano
1 tsp ground cumin
1/2 tsp dried thyme
1 tsp salt
1/4 tsp pepper
10 oz beef broth
2 tsp cornstarch

-Peel, seed dice sqaush.
-Cook until tender.
-Cook cauliflower, drain, then add to the cooked ,drained squash.
-Add the butter, cream{1/3 cup @ a time} egg, seasonings; mash until fluffy.
-Set aside.
Filling:
-In a large fry pan,heat the oil, add the onions garlic, sautee until tender.
-Add the ground beef, cook till browned.
-Add the seasonings.
-Mix the cornstarch with the beef broth, pour into the ground beef mixture, cook stir unti it thickens. Check if seasoning needs adjusting.
-Pour into a 9"x13" 230x330mm baking dish, smooth then spoon on topping.
-Sprinkle with paprika bake in a pre-heated 350°F-180°C oven for 45 minutes or until hot, bubbly the topping is lightly browned.
-Serve with a low carb salad or vegetables.

**Creamed soups or a white cheese sauce could be substituted for the beef broth cornstarch.Adjust carb counts.
