ROAST HARE

1 hare -- skinned and dried
1/4 cup soy flour -- or isolate
2/3 cup butter
1/3 cup beef stock
1 cup white wine
1/3 cup whipping cream
Salt and pepper
Lightly flour the meat tin with half of the flour. Baste the hare with the butter. Place in the oven at 230C/450F/gas mark 8 for 15 minutes.
Sprinkle with salt and pepper. Pour in the stock and white wine. Baste with the cream and bake at
200C/400F/gas mark 6 for 20 minutes.
