1 pheasant
1 partridge
1 lg onion -- halved
1 carrot -- chopped
1/4 cup butter
orange essence 1 tsp
3 tbsp soy flour
1/4 cup red wine
Salt and pepper

Place half the butter in a roasting pan and cook the birds in the oven at 350F/180C/gas mark 4 for 15 minutes. Remove from the oven and allow to cool.
Cut the birds into small joints reserving all skin and odd pieces. Return the joints of the bird to the roasting pan.
Place the skin and reserved unwanted pieces of the birds in a large saucepan with 2 1/2 =cups water and bring to the boil.
fry onions and carrots in the remaining butter, stir in flour and add a little strained stock from the skin and odd pieces. Stir until gravy thickens. Add orange essence and a little salt and pepper. Stir well.
Pour the sauce over the birds, cover and continue cooking 300F/150C/gas mark 2 for 25 minutes.
