2 slices bacon -- diced
1 tsp pepper
4 lb beef roast -- 2kg
1 green chili pepper -- seeded and minced
1 bay leaf
1/2 tsp dried thyme
2 cups diced tomatoes
1/2 tsp splenda
1 stalk celery -- chopped
1 onion -- chopped
2 cl minced garlic
2 tbsp chopped parsley
Fry the bacon until cooked but not crisp. Remove and set aside.
Season the roast and brown on all sides in bacon drippings.
Add remaining ingredients, cover and cook in crock pot on low 8 to 10 hours.
Add reserved bacon pieces, cover, turn on high and cook 15 minutes.
**** you may need to cut back n the omatoes a bit if you are wanting this to
be very LOW Carb
